Salt get's it's definition from being neither an acid or a base. It contains neither Hydrogen, or what's on the other end of the spectrum (help my brain has rotted after a few years of no classes).

Citric acid is just what's in fruit to make it a little tart and a common flavouring I believe.

Yes, citric acid is the sour stuff in lemons and other fruits. What I meant was I make some dishes using sour salt and on the bottle it just says citric acid. I think its calcium citrate (the calcium salt of citric acid).
