Veggie-heavy 'chili'. Lots of peppers: 1 each pasilla, anaheim, red and green bells; 1 lb ground beef; 1 chopped onion; small dice tomatoes and cilantro on top. Not the lowest carb meal you could make. But I follow a heavier-veggie plan.

Yes, like the sounds of that chili.

Tonight I had leftover chicken and veggies from a Teriyaki place (no sauce). Made my own quickie sauce that was great---1 tab soy sauce, 1 tab sesame oil, squeeze of ginger (from spice tube) and squeeze of garlic, microwave.

Dessert was little almond shortcakes with fresh blueberry sauce, and a lemony mascarpone and whipping cream topping. Even hubby, who is not dieting (yet!) loved it. Is this a diet?

boyfriend was at gym, so was on my own.
went with cold sesame ginger pasta salad- shirataki, bell pepper and tomato with dressing.
almonds later for snack.

The recipe is for Lemon Almond Shortbread from the website "I breathe, I'm hungry" (which I just love, especially the photos!). I added just a bit of egg white to the dough, because many in the comments said they were too crumbly. Tonight I am regretting that, because they are hard as a rock! But still delicious. I use a buttered muffin tin to shape and cook them, which worked pretty well. Tomorrow we are going to top them with chocolate sauce and shredded coconut.

Tonight we went out to the Mason Jar and daughter met us there for dinner. I love this place. It's a throwback to the 70s-80s fern bar with an old imported big English bar in the centerish, big old beams on the ceiling, real gas sconces all around with brick walls everywhere and tons of hanging baskets.
It has literally survived there since the late 70s.
I had the Thursday night special with Prime Rib with Asparagus, mushrooms with a house salad which I love because they put bacon and boiled egg on it.
Oh and we had an Artichoke and spinach dip to share for appetizer. I took half of the prime rib home and same with the mushrooms and Asparagus.

Home made Tuna salad (mayo, a little red onion, celery, seasoning--including a slosh of sriracha, which makes everything taste better). I plopped the tuna on a bed of freshly cooked and cooled spaghetti squash. That added a pleasant texture to the meal. A good summer salad...soon enough.

Last night I made Butter Chicken for dinner. It was so good! I used a seasoning packet, and the other ingredients called for were simply chicken, cream, onion, and tomato sauce. I used half the amount of tomato sauce and half the onion called for, and added extra cream. I figured the entire recipe to contain 55g of carbs, so divided into 8 servings came out to be 6.9g per serving. For a side I made spinach salad served with blue cheese dressing.

I'm planning almond flour coated chicken tenders with spicy mustard to dip them in, and a mixed green salad with olive red wine vinaigrette.

We ate at a waterfront seafood restaurant tonight and I had the best salmon ever!!!! It was pepperry grilled salmon topped with Dungeness crab, served on top of bue cheese dressing. Sides were grilled asparagus (yum) and roasted red potatoes. I loooove potatoes but I did not eat them! It was not too hard since the salmon was so delicious!

we had light dinner, as boyfriend had Crossfit after dinner.

salad with roasted turkey, cheddar, bell pepper, and a strawberry- with sf raspberry vinaigrette.

was pretty sick last night, so we kicked back with delivery- sashimi and a spicy lemon grass coconut milk soup (thai). it was like tom kha gai- but with veggies, no chicken. yum!
