the ginger coconut chicken turned out really yummy-I marinated the chicken breast overnight in coconut milk and fresh shredded ginger, then cut into strips and rolled in a combo of shredded and chipped coconut, then baked it at 350-they are really yummy, my kids even liked them! We had it with steamed broccolli, my kids are broccolli fanatics ![Smilie](/images/smilies/smile.gif) Thanks for the ideas and I'm going to try that almond flour cajun spice one soon!
Oh, and I did add a little agave nectar to the macaroons, they're good but messy, definitely not something I can make all the time but for a treat now and then they work.
Next on the agenda is a roast-I'm thinking of rubbing it with this great ranch herb mix I got at the health food store and cooking it in the crock pot with onions and carrots......
