Default muffin recipes please!

Hi all,

If anyone has an EASY ( and easy to find ingredients) recipe for lc muffins that don't taste like sawdust and cardboard,and don't smell like eggs,,,,,can you post it PLEASE!!!!!I need a change big time from eggs in the morning...I can't get Atkins bake mix and I probably would not pay that much $$$$$$ for it anyway, so I need a recipe that could use soy protien flour,,that I have ,,

This has been posted elsewhere in its chocolate form.

FLAX SEED MUFFINS
Pre-heat oven 350 F

1 c flax seed meal
1/2 c whey protein powder
4 tbsp oil
1/4 cup splenda
2 large eggs, lightly beaten
2 tsp baking powder
1 tsp artificial maple extract
1/2 tsp salt
2 oz chopped almonds (optional)
1 c water or soy milk

Mix all of the ingredients in a bowl, let stand for 3 minutes.
Spray a 12 muffin pan with non-stick spray. Spoon batter evenly into muffin tins. Bake 25-30 minutes.

Using soy milk, they equal 1 ECC per muffin.
