Thumbs up Macadamia-Crusted Fish with Hollandaise!

I've never been a huge fish fan but this is heaven!

MACADAMIA CRUSTED ORANGE ROUGHY WITH HOLLANDAISE SAUCE

Orange Roughy (2 filets) rinsed and patted dry thoroughly
1 egg
1/4 cup of KETO CRUMBS
1/4 cup of macadamia nuts
cayenne, garlic powder, Lawry's seasoning salt, paprika, pepper, thyme, and basil to taste (I'm pretty liberal but careful with the cayenne!)

1. combine the dry ingredients
2. dip patted dry fish into the egg
3. dip into the "breading"
4. Place into a buttered pyrex dish
5. Broil for about 10 minutes, turning over after five minutes (depending on your oven I put the rack in the middle and check to make sure it browns but doesnt burn)

HOLLANDAISE
(my hubby's family recipe and it is sooooo good on everything!)
2 egg yolks
1 stick of butter, melted
1 lemon
salt to taste

FOLLOW DIRECTION EXACTLY OR YOU MAY END UP WITH RUNNY OR CURDLED SAUCE!

1. Beat egg yolks on high until they are stiff and pale yellow (abt 8-10 minutes)
2. Gradually, about a tablespoon at a time, add the melted butter and continue to beat on high
3. after you have all of the butter in the eggs, add juice from one lemon, starting at a 1/2 of the lemon at a time (don't want it too sour) and salt
4. don't mix too long, maybe thirty seconds.
5. enjoy! It is sooo delicious over the fish as well as a dipping sauce for all your veggies!

***I got the idea of using crushed macadamia nuts as a coating on fish from the Atkins book, but I've completely modified it. In fact, those two ingredients are the only thing that remain!!
