At 10:30 really interesting chart comparing muscle meat to organ meat. I bet very few people here eat organ meat.

After seeing that presentation I think i'm going to try them a bit more. Even something as simple as chopping them up and mixing it with some chili's, stews, etc may go a long way!

I never have come around to liking beef or chicken liver, but there's a way to cheat a little bit. I dunno how paleo it is, but Mother Goose makes a pretty goose liverwurst which is nice to cut in tiny triangles to have have with wine/or what not. There's also Schaller and Weber liverwurst. Once in a blue moon my store will sell duck livers, which I gobble up. None of these are strong livery tasting.

Sweetbreads are always good, but I only see them in pricey restaurants, and lightly coated with flour, which I kinda ignore for the moment.

I read "lung" once on an ingredient list for some inexpensive sausage i used to eat, as it also included "lips" and something I can't remember right now that bugged me, so I quit buying it.

But you're right, most of us aint' regular eaters of it.

I remember in the book "Adrift", 'bout a guy on a lifeboat for 70 some days with little water and no food. When he had fish to eat, he dove into the livers first.

OK. I've seen the video now, it's nice to see Denise Minger rather than just read her stuff.

Another cheat came to mind after listening to her talk -- Head Cheese. This is something I've rarely been able to get others to eat, however it's a pretty mild tasting product that I find is really good cold on a plate with lettuce and mustard. A summer thing. Presumably, it's jelly is filled with glycine and the cut up meat bits (little squares that float randomly in the slices) have lots of collagen in them. Just don't tell people what it its.

A lot of the hostility toward her stems from the charge that she's just a figurehead for someone else -- that the evil meat industry has created this cute college girl and made it appear she is eviscerating Campbell, when it's really some old industry flack. Obviously, she knows what she's doing and what she's saying.

I suspect her critics would not want to personally debate her in the slightest.

Cheeks, tongue... dunno about lips, but those two are tasty. I'd like to have kidney again. I remember we liked it when I was a kid.

I don't think pate is cheating at all. Well, I suppose if you're a purist it is, but it is perfectly acceptable in my book.

Now I know who Denise Minger is. I enjoy heart. I keep trying liver but have not yet figured out how to best enjoy it. I have tried liverwurst from US Wellness meats and that is good. Bone broth is becoming a staple in my diet. It all makes a lot of sense to me. Fish head soup is a big thing here in Alaska, but I do not appreciate it (yet), however my daughter loves it.

Have had grass-fed beef liver in the freezer since a fit of paleo-enthusiasm at the farmer's market last year. Now I can't. bring. myself. to try. it.

I was really cheating buying liver pate from Trader Joe's.
But then bought some pasture-raised livers from the farmer's market...see difference here. This recipe is easy and full of all that goodness..really.

This is a little off topic, but I was just reading news this morning about the current locust problem in Egypt and Israel. Apparently, there are lots of Thai workers living in Israel and they think the locust "plague" is just great. They fry up the locusts as snacks.

I might be able to eat some of the organ meats Minger discussed, but I will die rather than eat bugs. I know it's not rational, but I. Just. Couldn't.
