Default Cat's Salmon Ceviche

I just had this at my friend Cat's house tonight - awesomely good. She said she looked at a number of different recipes and then, as usual, cobbled something together based on what she had on hand. (I wish I could "cobble" as well as she can!)

Cat's Salmon Ceviche (serves 8 as an appetizer)

1 lb. raw salmon fillet, deboned if necessary
1/2 c. lemon juice
1/2 c. lime juice

1 c. tomato juice
1 large tomato, seeded and chopped fine
1/2 red onion, diced
1/2 cup chopped cilantro
1 small can diced mild green chilles
1 Tbs. capers
1/4 tsp. oregano
2 pinches cayenne
salt and pepper to taste
2 ripe avocados, peeled and cut into 1/2" chunks

1/2 bag of baby spinach
  1. Remove the skin from the salmon and cut into 1/2" chunks. Marinate the salmon in the lemon and lime juice for 4 - 8 hours, until the salmon has turned opaque. Drain, discarding the marinade, and put the salmon in a large bowl.
  2. Add tomato juice, tomato, red onion, cilantro, chilles, capers, oregano, cayenne and salt and pepper to taste. (She said she used about 1/4 tsp each of salt and pepper.) Mix well.
  3. Add the avocado and mix gently.
  4. Arrange a bed of spinach on each plate. Spoon the salmon mixture over the spinach.

Best ceviche I have ever had.

LOL! I read the title and thought you stole the salmon from your cat! Although my cat is firmly of the opinion that all salmon belongs to him.

I value my skin - wouldn't dare steal salmon from my cats!
