I had a dear friend teach me to use a spoon to peel eggs. He turned the spoon upside down and pushed it around the egg, thus, releasing the shell. Been doing it this way since 1981.

I only boil my eggs for 4 minutes after the boiling starts.

Then i dump them in a bowl or pot of ice water, then peel them. Works every time.... and it leaves the middle soft, which is what i like,

I am from russia and we have a name for that type of egg, i have no clue whats its called here.

A quick message for peeling hard boiled eggs. If you drop them into ice cold water just as you finish boiling (cooling as quick as possible) shrinks the egg inside just a tiny bit, leaving a space between the shell and the egg to facilitate peeling. Another trick is to poke a small hole into the tip of the egg, using a sterile needle, just before placing in the water. Add a tiny bit of vinegar to the water before boiling also.
