Default carbs in yoghurt

Some interesting news for yoghurt lovers! I read this thread:

http://forum.lowcarber.org/showthre...&threadid=81871

which says that there are only about 4g of carbs in a cup of unsweetened yoghurt, effectively because the live cultures in the yoghurt 'eat' most of the lactose during the making process. So I'm keen to discover if this is true for local (NZ) products, and a bit nervous to ignore what the labels say (more like 12-16 carbs per cup)!

Anyway today I emailed EasiYo and asked about the effective carbs in their unsweetened yoghurts, and I just had this reply:

Dear Rachel
Thanks for your enquiry. Funny you should ask this at the very time that we have realised this ourselves, and are currently in the middle of testing the lactose levels in the finished product. We are testing levels when the yogurt is just made and when it is 12 hours old as the process is thought to continue for some time after the yogurt has set. Our results will be sent to you whatever the outcome so you know what you can eat and what you can't.
Kind regards

Good news, huh? I will post anything I hear back from them.

I've been going by the opinion that the bacteria eat up the lactose in yoghurt .... but I'd be really interested to know the results of their tests, I have an easyyo yoghurt maker but have been avoiding using it since I started LC-ing, I've bought regular full fat plain yoghurt instead... but I really love the easyyo taste .....

Rachel, you are my hero. I am looking forward to the Ezy-Yo results. I reallllllly realllllly miss my thick creamy natural yoghurt. I miss it on Turkish food, I miss it as raita on Indian food, I miss it with fruit (low carb berries of course! ) I miss it with toasted nuts and cinnamon sprinkled on top, I miss it mixed half n half with whipped cream and allowed to set in the fridge for a bit (nice desert - add some splenda if needed).

I love yoghurt.

To Rachel S, I was searching the forums looking for anyone else who had an EasiYo yoghurt maker and saw your post. Did you ever get a reply back from EasiYo regarding the carb content of their live yog. I have some sachets of BioLife yog with 5 different cultures in it and the packet gives the same carb measurement for both 100g of the dry mix and 150g of the finished product. If the cultures eat the lactose and reduce the carbs these cannot be the same. Just curious if you had a reply to your query. I know it was ages ago but I have just caught up with it.

Default About those yoghurt carbs...

Unfortunately the theory that the yoghurt carbs are eaten by the culture is largely a myth.

See this thread - The Truth About Carbs in YOGHURT - for the full story.
