Talking No Bake Vancouver Cheese cake!!!!

Hi there... just wanted to say that the otherday I made the cheese cake and it was FANTASTIC!! I made a few modifications as I 've never followed any recipe to a tee (haha). For a crust I used unsweetened med grated coconut ( almost next to no carbs per lable) mixed with some finely chopped pecans, vanilla, cinnamon, butter, splenda. I also put down a few berries before I poured the batter onto the crust. My final additive was some grated Ross dark chocolate into the batter giving it the look of chocolate specs... only needed a very small amt. The rest is History ( as is the cake now!!) My family loved it and couldn't get enough. I myself had trouble resisting eating more than I should ( but I did resist!!). This is a great cake but be warned.. betcha can't just have one... slice that is!! Enjoy!!

Since you made a coconut crust, consider this for next time...

Add lime juice and grated lime rind to the batter, use 1 cup of coconut milk for the custard, and you'll have a pina colada cheesecake!

I cup of the coconut milk in lieu of something ( cream?? ) or added to the custard mixture? Sounds like a plan!! Thanks!

Yep! In lieu of the 1 cup cream that goes into making the custard.
