Mine never get extremely crunchy, but they can get crunchy under the right conditions. I think fresh green beans turn out better than frozen and I like to really drench them in olive oil. I can eat two whole cookie sheets of green beans all by myself, especially if I dip them in Heinz One Carb ketchup. Sometimes I make a cookie sheet of green beans and I eat them so fast that I immediately make another.

And, I have no idea how to get green beans to curl like curly fries.

Also, you can roast other vegetables like this. I think roasted asparagus spears are particularly good. When it's available, I'll buy fresh asparagus spears that have been discounted because they don't look so good. These are going to swivel up and turn brown when roasted, so it doesn't matter what they look like to start with.

I gave this recipe to a non-low carb friend recently and her 3 year old grandson loves them. My friend sprays her with olive oil cooking spray.
