Ground Beef and Whatever
This is a favorite for me to have on hand. Brown a pound ground beef (I like to use grass-fed, organic) with some chopped garlic and/or chopped onion. Let cool and store in container in the frig. The sky is the limit here. When I need something quick, I put some of the cooked ground beef in a skillet with a coconut oil and then add whatever vegetables I have on hand - chopped spinach, broccoli, squash, mushrooms, kale, cauliflower, etc. The flavor can be changed by simply adding different seasonings. It's my favorite quick lunch or dinner! I actually saw a recipe for a ground beef/spinach frittata, but haven't tried mixing it with eggs yet.
