Paleo Pancakes
All right, this has become a favorite on my "up" days. I'm doing an Up Day/Down Day diet. One day very low calorie, the next day more normal.
2 Tbl ground roasted flax seed
2 Tbl ground chia
2 Tbl hemp hearts
1 tsp of baking powder (you can omit and/or use baking soda instead, it'll just be dense).
Mix dry ingredients with a fork.
Add 1-2 eggs and beat them into the dry ingredients with your fork. Add liquid (water, coconut milk, whatever) until it is fairly loose, like pancake batter.
Pour into a hot pan with some oil or grease and spread it out by tilting the pan. If you used a leavener it'll rise. Flip it once the top starts to look dry-ish.
You could use almost anything in place of the flax, hemp hearts and ground chia. ALmond meal, coconut flour, whatever strikes your fancy.
Toppings:
Heated, stevia (optional) sweetened frozen berries and butter.
Warm, melted butter or ghee and Moinin syrup.
Notes: Roasted flax seed tastes awesome. It kind of reminds me of roasted peanuts.
