Thud, nice pics, of course. The most crazy gelatinous broth I've made was from bone-in pork shoulder. If you've ever made Jello Jigglers that you can cut with a knife and eat with your fingers, that was it. I think I mixed it in with the pulled pork and its sauce, though it could have been a meal on its own.
