sounds like you have a good start.....i would focus on soups, stews, salads, roasted vegetable and tofu/ seitan kabobs

I would encourage you to look at /south beach instead of ketogenic- it's much more veg friendly and allows beans even in stage 1


Excellent suggestions and very do-able. I haven't thought of pumpkin or almond flour (I hear coconut flour is an option too). Thank you! I'll into the South Beach Diet. Sounds like a winner!
