That's interesting but you know, there are people in Texas doing the same thing, it's just a matter in locating them. We raise cattle and I would love to do that but we can't find a butcher who will do it on the hoof, slaughter a live animal. Same with deer, so many of them want the meat parts to process but don't want the whole animal, which is already hunted so not alive. Also there is the issue of if you actually receive back the processed animal you brought in.
At least the one you found does sell the certain parts you want and not the whole thing.
