Default Cauliflower "rice"

I made this last night and thought it was really good.

1 head of cauliflower, stems cut off
Salt
Pepper
Garlic
Olive oil
2 eggs
Kraft Classic Caesar Salad dressing.

Used food processer to grate cauliflower. Mine was a litter finer than I intended.
I was aiming for rice sized bits.

Pour cauliflower into heated pan and mix in 1 tsp (or more) minced garlic. Scramble two eggs into the mix. I used generous amount of olive oil in the pan and had to add more olive oil as the mixture cooked. Salt and pepper to taste. This was all I had intended to use, but after tasting, it seemed to need a little something extra. I decided to add the salad dressing to add a little more moisture and for a little more flavor.

The result seemed to me a lot like the fried rice in Japanese restaurants. The Caesar dressing was a good replacement for the ginger sauce. I guess you could also use a soy or teriyake sauce.
