First of all, toss the hot dogs - they're what's making you hungry with all that processed crap in there. Secondly, read the book.

There's a lot of variety to be had on this diet, you just have to be diligent. Check the Kitchen Forum, there are recipes in there for psyllium fiber pancakes that are legal on induction. There's also a hot pumpkin "cereal" recipe (although I don't think that's induction legal). You can make lasagna, just use sugar free sauce and use eggplant instead of noodles. Rice can be done by grating raw cauliflower on a cheese grater, stick it in the microwave for 5 minutes, add butter, salt, and pepper.

As for being too tired to chop veggies - PLAN PLAN PLAN. Get your salad vegetables home from the store, chop them up and put them in zip lock bags, and a crunchie veggie laden salad is only a minute away. Get rid of the carrots, the sugar in them is making you hungry.
