When my husband had bypass surgery back in 1995 I took the hospital-sponsored class about how to cook safely for a heart patient - all low-fat of course! They stoked our fear of fat with pictures of shortening in place of real foods - especially meat. We went from fairly natural foods to a more artificial low-fat diet. Both husband & I craved breads & I went overboard on beans & lentils (still miss the lentils!).
Even tho he's never had to lose weight, we both do a lot better on low carb.
