I thought I was the only person who was like this! Even now, I find I purchase more veggies than I actually eat, and so have to do a veggie purge on a regular basis. Hubby doesn't eat veggies much at all, so if I buy a head of lettuce, I can only eat so much of it and most of it goes to waste.
