I made this tonight, and it was wonderful
I did adapt the recipe slightly - didn't add the mushrooms and put some grated mozzarella cheese in instead of the Romano (no idea what Romano is *, but the mozzarella definitely worked in its place), and I only used a desertspoon of soured cream.
* have not come across this cheese before, don't think it's available in the UK
It tasted just like Colcannon Potatoes - which we obviously can't eat on a low carb woe, but by using Don's recipe, we can!
To make an even more authentic Colcannon, I shall make it again at the weekend using savoy cabbage. May also leave out the soured cream so that it ends up thicker. Will report back
