Without knowing whether I take this observation all that seriously--the usual caveats about quality of epidemiology etc--I'm not sure how you make this statement without considering that "However, when saturated fat replace sugar and refined starches (such as white flour, the risk of having a heart attack actually decreased," must be just as true. However true that might be.
I think there is some risk that people will simply add saturated fat to the carbs they're already eating--the fact that the author sandwiches "pastries" in between red meat and cheese when describing saturated fat containing foods does illustrate just how clueless people can be.
