Cheese is one of those things I add and subtract from my diet. I don't find that it knocks me out of ketosis, but it does cause me to retain some water weight (inflammation)? Right now, I'm eating at least two cheeseburgers a day, but having once been a compulsive daily weigher, I know I will go down a quick two or three pounds once I cut the cheese back out.
These days I only get on the scale for the monthly weigh in thread. Low carb has become more about my health than anything else. So why am I still eating cheese if it's probably causing me inflammation? Good question! Actually I know the answer - if it weren't the scale, I'm not sure I'd know that the cheese was doing anything negative to me.
