It seems that if a cow is allowed to graze on grass, and not be fed the grain and antibiotics they use to "fatten" them up, those meats will be inherently less fatty. I always get grass-fed ground beef as I can pump it up with veggies and flax to get some moisture into it. But I've never had a tender grass-fed steak -- that would be wonderful.
