Most MLB parks try to cater to just about everyone these days, and I don't blame them. They want your money, so they'll sell you what sounds appealing. There are gluten-free stands, kosher hot dog stands, etc. Coors Field food services are run by Aramark. I used to work for them. That was their game plan on our university campus, too - try to have something for everyone. No doubt you will be paying a HUGE premium for your pea protein hockey puck on a bun.
(Incidentally, I have the recipe for their burger sauce mentioned in the article if anyone wants it - it's ELITE. 😜 )
I don't blame big companies like Oscar Mayer (Heinz/Kraft) for trying to take their piece of the pie, too. Like Calianna said, it takes a big investment of time and money to develop the product and the biggest companies are the ones with the money. I'm sure the Oscar Mayer weenies will be better than Yves. Those are trash.
I DO hope the products are expensive enough to deter people.
