There's a few great granola recipes in Dana Carpender's 500 Low Carb Recipes cookbook.
When I eat low carb and/or high fiber cereal, it's usually not my entire breakfast. I'll mix it with yogurt or eat it and have a soft boiled egg or two on the side. It's more of a complement to my breakfast rather than the entire thing.
