Great idea! I added a little olive oil, parmesan cheese, and italian seasonings to the mixture and then used the "tortillas" as the base for pizza. It is the best pizza substitute I've found yet. Thanks.

My next experiment will be to replace a portion of the atkins baking mix with wheat protein isolate to get more of a wheaty taste and a little more pliability. The search for the perfect pizza substitute continues. . .
