I took my regular lasagna recipe and I replaced the noodle with sliced Chicken or Turkey breast from the deli. I have them slice it a little bit thicker than usual and start my casseroles with a layer in the bottom and for any second layer of "noodle". My Husband Loves it and we have made it at least once a week in the past few months. Before I hadn't made it in years because of the noodles. You can't even tell the difference. I did cut the tomato sauce back to cut the carbs and I use tomato paste to help give it more flavor without more carbs.

I have recently taken my Chicken and Beef Burrito Casseroles and done the same thing. We add a side salad with a low carb dressing and VOILA!

My husband has lost 15 pounds without doing anything different. He has cholesterol of 160 and completely normal blood pressure. He will be 70 in February and it is great to see him so healthy.
