Do you have a hand mixer???? It'll work great! I had mashed cauliflower tonight ! I put it in a baking dish and baked it for 15 minutes then topped it with shredded cheddar and sausage! Too yummy! Next time I am going to throw it in an iron skillet on top of a thin layer of low carb corn bread (don't have a recipe for that...yet).
