Default Garlic Shrimp Stir-Fry with Costco Low Carb Noodles

I'm going to share with you a recipe that I got from a friend and that I've been making a lot lately, because it's become my favorite

Ingredients:
  • 2 packages of Costco healthy noodle
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon soy sauce (or tamari for gluten-free option)
  • 1 tablespoon sriracha sauce (adjust to your desired spice level)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish (optional)


Instructions:
  • Heat olive oil in a large skillet or wok over medium-high heat.
  • Add minced garlic and sauté for about 1 minute until fragrant.
  • Add the shrimp to the skillet and cook for 2-3 minutes until shrimp turn pink and opaque.
  • In a small bowl, whisk together soy sauce, sriracha sauce, sesame oil, salt, and pepper.
  • Pour the sauce over the shrimp in the skillet. Stir to coat the shrimp evenly.
  • Add the prepared Shirataki noodles to the skillet and toss well with the shrimp until everything is heated through and well combined.
  • Remove from heat and garnish with fresh cilantro or green onions, if desired.
  • Serve hot and enjoy your low carb garlic shrimp stir-fry with noodles!
