I receieved a PM from a lovely member who wanted to try this recipe but wasn't sure what I meant by "Cajun spice". Thought I'd post here just in case anyone else out there is wondering the same thing .

There are commercially available "Cajun-style" seasonings ... read labels to make sure it has no undesirable ingredients. Lately I've been making my own seasoning blends. Much cheaper and there's more control over ingredients .. no sugar, starch, hydrogenated oil or other crap I don't want.

Here's my favourite basic homemade Cajun blend:
2 Tbsp finely ground sea salt
½ to 1 tsp cayenne pepper (can leave it out if you prefer)
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp paprika
1 Tbsp dried oregano
1 Tbsp dried thyme
1 tablespoon freshly ground black pepper

Mix well, and store in a tightly covered container. You could also add one finely ground or crushed bay leaf, if desired

makes 1/2 cup

Per 1 tsp serving : 1g carb - 0.5g fiber = 0.5g net carbs
