That's a great tip, Janet
I also find that frozen cauli works well for cauli-rice .. *BUT* .. you have to chop it up while still frozen. Either pulse quickly on-off a few times in a food processor .. or grate by hand with a box-grater (my preferred method). Thawed cauli won't grate very well because it's too soft .. and in a food processor it just turns into a watery mush
