I've been making a Pumpkin Creme -

1/2 cup ricotta cheese
about 2T canned pumpkin (more or less to taste)
5 drops Sweetzfree
pumpkin pie spice to taste
dash cream

Whip it all up really well and refrigerate. Tastes better if it sits for awhile for the flavors to blend.

There are a few recipes on the Sweet Treats forum for pumpkin bars and cheesecakes. LOVE the cheesecake!!!
