All my local health food stores have unsweetened dried coconut. I haven't actually looked at a regular grocery.
I'm not sure the coconut is actually intended to be a flavor. I think the function in the recipe is for texture. For a more coconut taste, I'd add extract.
Cocolate chip has been such a raving success that I'm not going to make any more. Too addictive, even for a low carb treat. Dried blueberries with macadamia nuts has been a success, and I'm going to try orange flavored with dried cherries to replace the traditional pastry on Xmas morning.
