Fish Salad
I was craving my childhood favorite of tuna fish sammich's and came up with this:
1 pound of cooked fish (tuna, mahi mahi or other non fishy smelly fish) 1 roasted jalapeno (chopped fine) 2 T of chopped onion (purple, green, vidalia) 2 T of chopped cilantro 1-2 T of sweet relish (to taste) salt to taste enough mayo to wet salad mix all of above and roll into lettuce leaves, wraps, don't wrap, pile on top of lettuce leaves.. make a salad nicoise, make a fish melt, whatever fits your fancy. sweet relish (us southerners love sweet in our salads) optional onion optional or more if desired. this recipe is interchangeable... but the idea is there for those of us remembering tuna fish sammich's growing up... *** this tastes so much better than canned fish. basic recipe for tuna fish, mix it up to your tastes.. :thup: |
Interesting idea, PG. Would have never thought to sub in fish for tuna in a salad like this. I'll have to try this!

I don't eat tuna anymore cuz I get horrible fish burps from it and the mercury. So it's awesome to think of doing other fish. I have been using canned salmon as a replacement and sometimes canned chicken. But cans have BPA in them. BPA is a powerful hormone disruptor and I'm a 4mos survivor of Stage IIIC, Estrogen/Progesterone Positive Breast Cancer. So when the pantry is empty of stock, I won't be buying any more!!! Thanks for the recipe! |
