I keep finding new recipes that I haven't tried but I figured someone might enjoy them... (i don't like cabbage!)


Low Carb Cabbage Rolls

Ingredients:

White cabbage leaves, 4 large
Cottage cheese 2 c
Eggs 2, boiled and chopped
Sour cream 1 c
Dry thyme 2 t
Dry mint 1 t

Boil the cabbage leaves in salted water for 5 min., drain, and cool. Cut off the thickest part of the leaf veins, making sure the leaf is not cut through.

In a bowl, mix the cottage cheese, eggs, and spices. Wrap 1/4of the mixture in every leaf, put in a baking pan, and cover with sour cream. Bake until the leaves are soft.<
