Alfredo Sauce - P:E-Friendly
Loosely based on this recipe. Changes I made: used ultra-filtered milk, and reduced the quantity because it wouldn't have fit in my Magic Bullet. I subbed xanthan gum for cornstarch and omitted salt because I find parm cheese very salty.
3/4 c ultra-filtered skim milk (I used Fairlife)
1/2 c 1% cottage cheese
1/4 tsp ea pepper, garlic powder
1/8 tsp ea dried basil, oregano
1/2 c dry grated parmesan cheese
pinch xanthan gum or other thickener
salt to taste
Combine ingredients in blender, blend until smooth. Pour into saucepan, simmer until desired consistency. Adjust for thickness. Makes 4 servings.
I went overboard on the xanthan gum, using 1/4 tsp. It came out pasty, but the flavour was spot-on. :thup: It really reminds me of how I remember Classico jarred alfredo.
Nutrition per serving:
5 g fat
4 g carb (.5 fiber)
14 g protein (!!)
