The instructions sure sound as if you'd be taking the proper precautions to make sure you don't get any of the "raw hamburger nasties" - if you try it, let us know how you like it!

I think I would have trouble getting myself to eat raw meat like this, however I do love Sashimi, and raw very thinly sliced beef dipped into a very hot sauce which seems to almost cook it.

It sounds more appetizing when called "steak tartare". I still wouldn't eat it, though.

I love steak tartare!!...this recipe is a Italian version of this French dish, I think it will be worth a try as Steak Tartare can be a long process...

I don't know why a franglish term like that would make it sound more appetizing than an italian one. The all'Albese style with anchovies and lemon juice and olive oil, is quite different from when I've had it as tartare (usually with egg yolk). I guess it doesn't really matter what we chose to call it, as long as it tastes good.

P.S.: I've had Kitfo in an Eritrean restaurant, ground beef and red pepper, it was quite good as well.

Tartare is a similar meaning; it suggests something rough and crude, like a Tartar horseman would eat. In Belgium the dish is called "filet américain", presumably because it infers the same sort of tough, rugged, eating wild kind of thing. Anyway, raw meat, by any other name.. n'all that.

I love steak tartare :) I've eaten plenty of raw minced beef, I've never had any problems from it. then again, it's all in the handling.

Can't eat it without some seasoning though, just tastes like blood but with a bit of garlic, parsley and onion. NOM!

Eating raw beef is no more dangerous than eating a rare steak. IF...and it's a big "IF" you buy a proper cut of beef from a trusted supplier and chop it yourself. Eating purchased ground beef is an entirely different subject. There are far more dangerous things to eat; you're far more likely to become ill from raw salad veggies than from properly prepared raw beef.

"Crudo" just means "raw" in Italian.

This looks great, I'll try this soon. My family, all the females that is, have always eaten raw beef since we can remember and have had no problems. I agree that you must buy from a trusted vender. Thank you for posting this recipe.
