Fast and Easy Microwaveable Sides
 
Quick Cheesy Broccoli

1/2 bag frozen broccoli pieces
2 oz shredded cheddar cheese
1 tablespoon butter
1/4 cup sour cream or mayonnaise
salt and pepper to taste

Microwave on high for 2-3 minutes or until heated through.


I threw this into a bowl and took it to work today because I needed some fiber and was tired of all the protein :daze: . Anybody else have any good ideas for one dish veggies to nuke at work? This would probably be good with some chicken thrown in it, too.

Look good - thanks for sharing it. I don't really have any veggies I take - I am a salad eater, but this is one to try.

I make the Deep dish Pizza Quiche (the recipe's here), cut it up into squares, and freeze them in self-seal sandwich bags. I just grab one from the freezer in the morning and pop it in the microwave at lunch time.

Another thing I do is make low carb homemade soups and freeze individual servings in self-seal sandwich bags. At lunch time, I remove it from the bag into a bowl and microwave it.

That sounds great Cheri...I'm definately going to try it and maybe add the chicken like you suggested too. :yum:
