4 ingredient 2-minute Oriental Salad

At walmart in the produce section they have bags of "Broccoli Slaw" It runs 2 net carbs for 1 1/4 cup. It has mostly broccoli stalks (no part of the floret), a little carrot and a little purple cabbage cut up into thin thin strips.

Anyhoo.

Broccoli Slaw 1 & 1/4 cup
Mayonaise (3 tbs? to your liking!)
Sesame Seed Oil (find it in the "Chinese" section)
1 packet Splenda (or your prefered sweetener)

(sometimes I throw in a little brine from my bottle of pepperochini's but it's really not neccesary, just makes me feel fancy ;) )

Mix, Eat. It tastes......I don't know, it's just SO GOOD. It's crunchy and a little sweet and Sesame Seed flavored Mayonaise goodness! I hope you'll try it! (and sorry if this is a re-peat, I came up with this one day by accident, but others may have come before me!)

SO, for the whole thing? 3 carbs or less, depending on how you count Splenda. I freaking love it!

Sounds divine. Adding it to my list of summer recipes! Thank you.

It FEELS just like cole slaw!!! Super crunchy! :) The broccoli is only the stalk portion (which I never even liked before!) so it really does kinda taste like cole slaw, no broccoli floret flavor. I actually wanted to make REAL cole slaw, but didn't have the right ingredients so just threw this together instead.

I just cook it down like you would cabbage in a little bacon grease. It's super yummy but then again, what ISN'T with bacon??? lol

JEY100 Tue, Jun-12-12 08:07

For so many on this forum, like Linda, it's all about the bacon.

I often cook cabbage slaw or broccoli slaw for a quick veggie side dish, in coconut oil, or butter & olive oil mixed, and maybe add some toasted sesame oil at the end for flavor. Splash of soy sauce or similar and it becomes Asian.

Open large inexpensive bag of coleslaw mix from Sam's Club...pour in pan, sautee and serve.
