30 second Blackberry ice cream
Seriously. I'm sure there is something else like this somewhere, but I've not seen it.
This is so simple, I'm wishing I thought of it sooner. I have a TON of berries in my freezer, and was trying to think of something to do with them...and I found the best ice cream! Take a big handful of frozen berries, and toss them in the food processor (I'd guess 1/3 cup or maybe a tad more). Blitz to break them up a bit. Add in 3-4 tbsp of heavy whipping cream and sweetner of choice (I use 2 tsp xylitol). Blitzh til smooth. Instant ice cream! The frozen berries "freeze" the cream, and it's PERFECT. :wave: |

Works super well with raspberries (I think I like this better than blackberry!) and strawberries. Gonna give blueberry a go next!
I really need to try and freeze some and see how it keeps. I'm assuming it'll turn into a rock hard frozen mess, but maybe not. And even if it does, I suppose I could get some popsicle molds and make bars out of it! Ooooooh....multiple flavors....EEEEK! :D |

this is a staple in my house now! After tasting it, I can't believe this isn't delicious amazing strawberry ice cream! I bought an ice cream maker than can't do this!!! thanks for a good recipe. |
Yum! I'll try this. I usually make blackberry cream cheese smoothies. I have a lot in the freezer also!

I tried this with frozen strawberries, cream, a few drops of liquid splenda and a few LC/SF chocolate chips. OMG like a strawberry chocolate chip milk shake. Amazingly delicous and easy.
I had to nuke the strawberries just a bit though since even with the heavy blade on my food processor they were just like rocks straight from the freezer. Did you ever try freezing the results to see if they get rock hard? Would love to know if I could make a double or triple batch at once and freeze it for later. |
I haven't. I have been meaning to, but can never manage to save any...someone always eats it :lol:. The way I see it, no matter what happens, it'll be a win win.
If it stays "scoopable", brilliant. If not, I can put it into popsicle molds and make my own ice cream bars and even do 2 or 3 flavors! I'm dreaming of half blackberry, half raspberry. I also have been wanting to try bluberry. My assumption is it will freeze solid like what happens to a semifredo if you freeze it all the way. With the strawberries, I cut them into quarters or 6ths if they are large. That seems to help with keeping the large chunks away. |

I tried freezing it last night - it comes out solid. So...next step is to buy some popsicle molds and try some frozen treats! :)

Krys: the blueberry is awesome. I make this for my kids instead of commercial ice cream. I don't add sweetner though. Just frozen berries, fresh cream, and a small splash of vanilla flavoring.
You can also make berry cheesecake icecream by adding an ounce or so of cream cheese to the mix. Just blend the berries and cheese a bit before adding in the cream, of the cheese will be blob-by. |
Nice! I'll have to try that. I added some cream cheese one day to my protein shake, but it was a small amount and I didn't notice too much of a change. I'll give it a go!
I just love this stuff. I made it into popsicles about 2 weeks ago and they were really good - I did a blueberry, raspberry, and blackberry layer. Looked like one of those rocket pops from back in the day. :D |
Maybe, you could try to put into the micro before you eat it if frozen in a larger container just to soften it up a bit, just a thought.

I'm trying this with strawberries tonight. I'm going to try it with my stick blender it really purees stuff smooth. I'll test it on my family... this sounds like it'll be a winner around here.
