Andy ~ Thank you for such a good summary of William Banting's "Letter on Corpulence" which proves the old adage ~ there's nothing new under the sun, other than our understanding why. Banting did what I am basically doing with the same results, only he simplified his diet. After dropping BS's to normal range & losing 30 lb. in 4 mo., I am about to simplify mine, too.
