Terrific Turnip Casserole
 
1 medium turnip, peeled and cut into pieces. Boil with a bit of salt added to the water.

When the turnip is cooked and tender, drain and add 1 Tbsp. butter and mash.

Add salt, pepper, celery salt to taste
1 tsp. dill weed.
1/4 cup chopped onion
2 eggs

Mix together. Pam spray a casserole dish and put the turnip mix in.

Sprinkle top with bacon bits if desired or with paprika.

Bake at 350 for 45 minutes.

I'm trying to find more recipes for turnips so I was glad to see this one. However, the turnips I can buy are the size of onions. Are you talking about turnips or the 'orangey' rutabaga? The medium-size turnip will not last far in this household unless this recipe is for 1 person? Would be easy to multiply the recipe if so. Thanks.

No I'm talking about a bigger turnip, about the size of a honeydew melon. That's the size I use in this recipe.

Well, they must grow them bigger in Canada. :lol: I've only been able to find ones as large as a softball but most are the size of apples. I'll keep looking or use 2 'large' to equal the 'melon' size. I did try the recipe and it was delicious. :yum: Still on the lookout for more turnip recipes. Thanks again & your weight loss is ASTONISHING!!!
