OMGOSH!
i just made it and it is SOOOooooo goooooooooooooood!

here is how "i" did it
1/2 cup pumpkin (9 grams, 5 are fiber)
2 tbspns whipped cream cheese (2 more cabs)
cinnamon
nutmeg
1/4 tsp rum extract
and a dropper full of liquid stevia ( 0 carbs.. extra sweet)

WOooowza.. should i move this whole post to recipes? how would i do that? this rocks!

I put it into the fride, nice for somethign creamy like :)

Put it in pancakes! hmmm if i am ever brave enough to try lc pancakes, i will be sure to do so, but there is another idea.. i can just brown it all up in a pan .. i will try later and let everyone know how it went
i would rather keep it mostly lower carbs than adding whipped cream and stuff, just so i can have it more often! :)

This is freakin awesome!
i ran out and bought a can of pumkin today to try it.
I dont suppose this is induction friendly though?
oh well, i might have to freeze it and wait a few weeks.

Sure it is induction friendly, at least as long as you use the stevia... i dont know much aout splenda or how much it would take to sweeten it with splenda. Pumpkin is on the induction list though...i am not sure about the whipped cream cheese, it is only 1 carb per tbsp though. PLUS the pumpkin is loaded with fibre.. wow that "worked" out great LOL

I am tempted to go out and get the ingredients and make it tonight... but really need to wait until tomorrow. Carbs maxed for today.

Bren I used Stevia quite a few years ago but did not realize it had no carbs... What is it exactly ?

Stevia is a completely natural sweetener. It is tons sweeter than sugar too, at least in powder form, so you use much less of it. Netrition has it in liquid form. I've never tried the liquid, but I imagine it's just as good as the powder.

WOOHOO! Induction friendly.

I tried stevia a few years ago. I didnt like it much and i found it to be really expensive, like $10 a box.

I looked and didn't even see canned pumpkin. :(
Guess I'm going to have to do all the hard work myself. I'll use fresh pumpkin and overcook it so it has canned consistency. :)

Well i figure if it can fit in the freezer, it can be frozen lol. After the can is opened that is.

Beware - that amount of stevia would be way too much with some brands. Mine (Now brand) is super-strong and a whole dropper full would ruin a recipe! :daze: Start out with a few drops and taste it.

now i understand why you wanted to freeze it! one time i had a friend who was making a casserole that called for frozen green beans. i happened to be there as she took a can of green beans out of the freezer.(guess she was following the instructions closely!) i guess it made sense to her at the time, but i thought it was pretty funny!
