Blue Cheese Dressing, the base is good with out the cheese

1/4 cup mayonnaise
1/2 cup sour cream
2 Tablespoons Lemon Bouquet Vinegar(directions to make your own below)
1/4 tsp dry mustard
1/2 tsp salt
1/4 tsp garlic powder
1 tsp finely grated onion, (I use green onion)
3 to 4 ounces crumbled bleu cheese

Mix above ingredients together by hand. Chill well and enjoy! Keep unused portion refrigerated. Will last about 7 days.
Makes a little over a cup.

To make your own flavored vinegar you really are only limited by your imagination, they can be used in anything. One of my favorites it to add a tablespoon to my slow cookers roasts and pork, and othe meats and sauces.

For Lemon Bouquet vinegar the following is my own creation and amounts are to what you would like or think is pretty in your bottle. You can use any GLASS bottle with a very good cork. I have found bottles at kitchen supply stores.

1 lemon sliced and slightly dehydrated so you can twist the slices into the bottle.(I used my dehydrator or you can put them in the oven under lowest heat until they are to the point you can twist them. you don't want them completely dry)
2 sprigs rosemary
1 or 2 garlic cloves
tyme leaves
sage leaves
taragon leaves
any othe herb you might would like to add. If you can't find the herbs listed find what would taste good to use. these are some of my favs. FRESH is best.
Usisg Italian herbs like basil and oregeno with give it that unique flavor that is great to use in tomato sauces.
to place in the bottle buy bamboo skewers to help.
Fill the bottle with White Wine Vinegar. (I can find gallon jugs of both red and white wine vinegar at costco for as much as you would spend on a small bottle in the grocery store.)
Let the flavors infuse for two weeks before using, or heat to a simmer the vinegar (do not boil!) and let infuse for 1 week.

My favorite vinegar bottle is made with redwine vinegar using the herbs, I made one for Poofie with one slice of lime in it and it is really yummy.

The recipe and the idea for the vinegar bottles come from two books that I have called, Off the Vine with the Vinegar Ladies
And The Vinegar Book II

Have to give credit where credit is due.
