I've been realizing that it can be a challenge to get enough vitamins and minerals on a vegan or vegetarian low-carb diet, so I wanted to start this thread as a way to share tips about low-carb vegan and vegetarian ways to boost the vitamin and mineral content of your diet.

I'm going to try adding at least a few each week. All of my tips will be vegan, but obviously feel free to add vegetarian tips as well. I realize I'm in the minority here ;)

I'll start with one that I just realized yesterday.

Just three grams (1 teaspoon) of cumin seeds provides eleven percent of your daily need for iron (all for just one carb). ELEVEN! And iron can be a challenge, especially if you don't eat much nuts, seeds or legumes (all great sources). Cheese is very low in iron, and one jumbo egg only gives you 6%, so don't think you're off the hook, vegetarians!

Three grams of cumin seeds also provides 3% of both calcium and magnesium, just as an added bonus.

Fry them in some oil before adding them to your beans, soup, curry etc.

Most grocery stores sell them, but they'll be expensive. Look at Indian stores, where you should be able to get 100 grams for under three bucks, maybe even under two.

Vegetarian sources for Vitamins and Minerals
 
Barley grass juice powder - even better than wheatgrass! Dont get leaf grass - its basically a con.

Chlorella, Chia seeds... SUPERFOODS! they are ALL veggie!

Hi there, I eat meat, but I have some questions for the vegans out there, just my curosity nothing more.

How do vegans (the serious absolutely no animal products) get enough protien? What high protien sources are out there that doesn't come from an animal in some way?

Are their a lot of protien powders used? I assume some veggies and nuts are loaded?
