Easy Greek Salad
This is a great salad!! Not certain of the carb count, but seems relatively low---
In a bowl, combine the following: 6 tablespoons of olive oil 3 tablespoons of red wine vinegar one sliced/peeled cucumber one half of a sliced red onion one small can of sliced black olive cut into fourths approx 12 cherry tomatos one tablespoon of minced garlic squeeze half of a lemon over mixture salt pepper Mix together and let marinade for 30 - 60 minutes THEN pour mixture over a bowl of romaine lettuce ( i buy the romaine in a bag, so i pour mixture over one bag of romaine) Toss all together with Feta Cheese! It is wonderful as a side dish or to make it a meal, add grilled chicken or shrimp! We love it! It is easy, low carb, and yummy! |
Try adding a little dried oregano (crushed) to the vinegar/olive oil mixture. Or...sprinkle on a little "Greek Seasoning" just before eating. You can find this in most grocery stores. :)
