i was hungry for a small snack last night, but really didn't want to dip into the cream cheese as i already had too much earlier in day, so I experimented.

1 Tbsp coconut oil
peppermint extract
sweetener

i melted the coconut oil in a very small dish, the kind chefs on tv use for premeasuring the spices. Then I mixed in liquid splenda and peppermint extract, and placed in the freezer.

I believe the splenda separated out as there was liquid on the bottom of the dish i tossed out. i also seemed to have a sweet coating on lips all night that it took a while to figure out was probably the splenda. i kept wondering when I put on the kids chapstick every time I licked my lips.

Going to try this again since the taste was amazing, and it was kind of like a mint meltaway, but going to try different sweeteners to see if powdered ones separate less.

Erythritol will add that minty cooling effect if you use it.

The second time I tried it, I used stevia packet with Erythritol added. I think the whole packet may of been too much. I also tried stirring it part way through.

The result was more of a grainy texture and not a single piece of candy like with the first time. I might try the liquid again, or use the stevia but less and not stir.

I use this recipe with half coconut butter and half coconut oil, stevia instead of honey, and a pinch of arrowroot, it is AMAZING. best low carb treat I think I've ever found, and it really is satisfying from all the good fat.

I'm out of coconut butter right now, unfortunately. I do have oil though so I might just try this soon. I can also melt the unsweetened chocolate I have and add some sweetener to mimic the chocolate coating
