Egg Bites (ala Starbucks)
 
Has anyone tried reproducing these yet? They're super tasty and lovely. I'm getting my silicone forms today (hopefully) and I'll try an instant pot version soon.

I did see those, but I don't have those tiny jars. Hopefully my silicone molds will arrive today.

Nancy those jars are jelly jars and in most stores right now as there are a seasonal item. Great for multi use. I put peanut butter in them for kids lunches.

Otherwise, to make up an egg, I use a ceramic bowl, drop i egg, whisk, add extras or not and microwave. For a change of pace. The sizing is different: flat and wide round. Makes for quick egg salad. A ceramic mug works too.

I envy you your silicon option-- will be loads of fun to trial those babies!!

I'm just going to use muffin tins with cup liners. I found a similar recipe that has "if you want to use an oven." Of course, I have no eggs right now or the other ingredients...I really could have used them to make a slew of these for the kiddos to eat on the way to a 9am soccer games tomorrow...Le sigh.

Another time perhaps.

I never heard of this. I mean of course I've heard of the lowcarb egg-etc. muffins but I mean of the starbucks thing. (Because I live in a cave.) I have tons of diff kinds of silicone molds and I finally get a new range Wednesday!! (Have been stuck with a toaster oven for years!) Maybe I should make an eggy wonderland of mini-muffins to celebrate. :-) If you work out a recipe that's yummy, share it please!

That's the recipe I used, PJ! It worked out well, or would have had I remembered to add the prosciutto. They came out puffy and light.
