coconut milk question
 
I had a couple cups of left-over coconut milk (the kind in the carton, not the can) in the fridge & sort of forgot about it. When I got it out today it was frothy on top & had a strong coconut smell - which it doesn't usually have.

I haven't tasted it, but I'm guessing it's starting to ferment. Anyone know if this would be safe to use? I'm guessing not, but I've not seen this before & wonder if anyone else has.

If the cartons were open I would dump them.

I had transferred it into a glass jar, which is why I was able to see the froth. Had I left it in the carton, I'd probably have used it. :)

The carton of coconut milk I got a couple of weeks ago advised me to consume it within 5 days of opening. Which I mostly did, then tipped out what little was left afterwards.

So I think I'm with Billy on this, I'd get rid of it.

I wouldn't take a chance on it. Everything that we usually ferment - yogurt, pickles, beer, etc - is done at room temperature. I'd have to assume that the bacteria/fungi/etc that take off at refrigerator temps is bad news. :exclm:

Safely-fermented coconut milk would probably be really tasty, though. :) I made coconut yogurt a while back and it was quite good.

When in doubt, throw it out!
I bought fermented coconut kefir once, and well, there is a reason I only bought it once. I love dairy kefir, but the coconut was so sour. Blech!
